Bald Chin Groper recipe?

Caught my first Baldchin Groper today - approx 4Kg

Anyone got an idea for the best way to cook it?

A fair bit like dhuie in terms of how it cooks up for the most part. Tastes better IMO though. For baldie, I like just a bit of butter (and a dash of oil to stop it burning) and put it in the pan. Nothing else needed. Cook until "just" done (so its a translucent white at the centre). All the usual things will work like fresh lemon, lemon and pepper, cream sauces, white wine, etc.

Agree with Hlokk, better than dhuie imo but i wont complain with dhuie thats fosure. Baldy you can do anything to it and it will taste great. Just dont over cook it or it will lose its natural juices and soft texture. well done on the catch 4kg is a great baldy!
