Filleting knives

 After a good filleting knife. Any recommendations on size or brands? To suit bigger size fish ( dhu , snapper etc )

Agree
Swibos are good knifes. But keep them clean and dry when not in use otherwise the blade will pit in no time at all.
My shirts are short ones...:-)

with the above wenger and victorinox are the 2 quality brands ( same ownership and same brand as of 2014 ) carefull as there are alot of other inferior knifes called swibo with the yellow handle and all

 I like swibo/wenger but won't be buying anymore until they start selling them with sheathes. Very easy to chip the edges. Blade runner make ok filleting knifes in various styles as a budget option.

Have Swibo, holds a good edge but very hard to get it back if you let them go too far.
Marttiini, very nice similar to the Swibo in type of steel, very hard. These blades are quite shinny in appearance.
Just got a Dexter which I rate. The blade is a bit duller in looks, certainly not as far as the edge goes. Holds the edge well and you can get it back with a lot less work than the other two mentioned.

a pommy mate of mine used to come down from Darwin once a year for a dive trip to Onslow , he was a butcher buy trade and swore by swibos the best thing was he would see me trying to fillet a coral trout and he would do his block and shout leave the fxxxxxx filiting to me. I would have a chuckle and say to my self he has fallen for it again haha had a few big dick knifes as well they seem to hold an edge , biggest thing is have a good steel and don't use those knife sharpeners they just rip metal of the knife nothing beats a stone and a steel I consider a a knife sharp when it can cut through a piece of paper with out feeling jaggard

 I favour the less flexible straight backed boning knives around the 15cm Mark. There's a Swibo one on page three of that link above. I use Victorinox to good effect and use a quality diamond steel to keep them sharp. I'm about to lash out on a much harder knife plus a good quality sharpener to add to the collection.

I'll keep you posted in those.

 Nothing, most knives will suffer a bit of damage to the blade one, swibo will dent and bend and a green river will just go  blunt. Fillet down the back and gut, then I/we rip up the backbone and shazam, a fillet with no meat left on the frame and a sharp knife for the whole trip.theonly bone left on the fillet is the cage and pin bones. These get removed with a different knife. Come to shark bay this Wednesday and if I catch some fish I'll show you how I fillet them

 I also swear by swibo wenger knives but one knife will not do it all I have a couple of flexible blade knives and find a rigid blade better for skinning the fillet. 

To keep them like razor blades a nirey electric knife sharpener distributed by king of knives is exceptional along with a steel.

 You would be talking about the rib cage? I slce above it and leave it on the frame. The only bones in my fillets when it comes off the body are the tiny pin bones along the centre. I then slice either side to get I'd of them. It's just a small sliver of flesh.

 

There's also a neat way to remove the pectoral fins for a great roast bit or BBQ. I'd have to show you a video for how to cut between the cheek bones to release it.

After reading a few recommendations on here I bought a Dexter to replace my previous filleter.

Has arrived and it looks good, but haven't had a chance to get out there to catch anything to fillet with it yet so can't review it!

 tramontina knifes latley they are carbon steel and hold there edge way longer than swibos mine came in a set of 3 knifes filliting ,boning and skining knifes plus a good steel in an AOS canvas pouch for$130 from complete angler in rocko  have use heaps of swibos before and had some dexture russels before and i reckon these are on par with the dexters

Have a few different filleting knives myself but as above don't use them to cut through bone, I have a short stout knife dedicated for this (taking heads off etc) which saves the blades on the others... Chicken shears is a good idea :-)
