Fish Taste Problem

Hi guys , latly it seems alot of fish i catch dhufish , queen snapper , snapper have a real ammonium taste / smell to the meat when cooked up . Just wondering why this is as it is top quality fish that are being caught and put on ice straight away .
would bleeding the fish would have a significant effect on this and is there other factors to include ? cant be the way that i am cooking it can it ?

the best way to treat your fish after capture is to spike then bleed, after bleeding them rinse the the blood off then into a ice and sea water slurry. other than that i cant see any reason why your fish taste like they do. removing the blood leaves a whiter flesh and not so strong taste.
PS . what sort of pan are you cooking your fish in as this can sometimes make a difference as well

Hey faulkner family i think this might be the problem as i only sometimes bleed my fish however i have never really encountered the meat tasting so ammonium like. AN on another note we just realised that in our fry pan there is a crack through the bottom obviously been there for a while and when we decided to cook the fish oil an juice seeped through n everything went up lol

Mate, first bleed your fish,
Mate, first bleed your fish, then maybe try changing your pan, and last of all, if all else fails, try changing the recipe, (do one at a time, so you can pinpoint what the problem was). Good luck. Fab
