feel like a feed of them now. were they cold smoked? ive got way to much heat in my smoker atm and it ends up cooking the fish rather than smoking.

Southcity104: same smoker as yours, a little hot smoker, so the hezza is smoked and cooked

Yeah that looks good, the garlic cream sauce would have gone nicely with the smoked fish I'd imagine?

Need a few more fillets there though bro.

Nice looking dish there till. I smoke a whole heap of Herring (tobacco not in the same recipe LOL). They are GREAT finger food with a beer. At the moment I am using Olive sawdust. It's really nice with a tinge of peppery flavour.
