Smoked Tuna & Broad Bean Pasta

Tuna from this recent trip with Pete D & Brad. Half of it was smoked in the BBQ, the other half in a proper fish smoker. The BBQ was ok till it got a little windy and that caused the woodchips to burn too well.

  • Put the water on to steam the broad beans, while its coming to the boil, juice half a lemon and cut up a good handful of parsley.
  • Juice half a lemon, cut up a good handful of parsley
  • Steam your broad beans for 4-5min, then double pod them
  • While you're double podding the broad beans, cook your pasta (in this case fusilli)
  • When you're pasta is just done, drain it well, then put it back in the pan it was cooked in.
  • Stir in the lemon juice, 1/4 cup of cream, parsley and broad beans then quickly reheat.
  • Serve!

Regular Masterchef........we normally sashimi SBT as it is just deluxe, but there is only so much you can eat like that and even a little tuna has a lot of meat....

 

how long and how hot do you smoke for?

i think you should have your own page on cooking? i had some tuna patties from the one we got on sunday, very nice, but not in the same leauge as you.

patties are about my limit on tuna and my old boy made them at that!

JohnF I hear ya! This was the first time Tuna has enetered the house and not been sashimied, and trust me plenty went down on the boat that day too.

 

My nearly 3yr old, when asked what his favourite fish is, replied Tuna.

Yeah Till, my youngest bloke who is 2 and a half absolutley scoffs sashimi tuna..........just gotta grow him a bit more so he can come and help catch em and not just eat em.
