The t-bone was from Antoine's fine Meats in Rivervale.

The cray was from Rotto ;)

Its barely cooked, just set, and cooked only on the shell side.

Commercial crays are boiled for 25min to avoid the black spots, but you may as well eat a boot.

WRL raw is great, try it sometime with a fresh one!

Have to try it, I know overcookin them like anything ruins them, but never tried it raw, do you soy and wasabi it still sashimi style Alfred?

looks the goods Jamie, when you make it for me i'll either have creamy garlic sauce with finely diced bacon on top of the cray , or mixed parmesan, onion and garlic on top with a couple of minutes under the grill!!LOL  cheers mate im hungry now just looking at it!
