Fish wings are the bomb!!

 Just devoured two sets of fish wings of a couple of breaksea cod freshly caught this morning,

just fryed them in butter added some garlic, parsley, chives and basil and mate they tasted good.

I never bothered with wings in the past but gotta say they take some beating.

 

weather forecast today was a little out, swell seemed to be rising 1.5 to 2 metre and only had

a short period of little wind, still a good day on the water, ended up with some good fish, those

dhuies are hard to find. how did others go?

...to get wings off a smaller fish like a BA. Wait til your lips get a hold of dhuie wings from fish of 5 kg and up! The texture is just like chicken!

After I finish filleting a catch, the wings and frames go on the BBQ for a treat. I always wondered why some people would stand at the fish cleaning tables and ask for the frames, now I know, also fish head soup as well.

 Yeah I never use to bother with the wings, went on a trip to Shark Bay last winter and had a few of the oldies asking for the wings so thought I would give them a crack, they come up an absolute treat. Whereabouts can I see the video bunny, at the moment I pretty much cut the hard bone near the cheek then pull it hard to seperate then cut the underneath section, clean the White lining on the inside and scale the outside.
