Had to get the smoker out after landing these with my son the other night. Includes a 30cm one!

can you tell me if you butterfly and lay skin or flesh side down or do you hang them?
I have a smoker and want to have another shot at herring as i farked the 1st batch.

This is my first crack at smoking herring but I have done about 100 trout.
I have a Masterbuilt electric smoker.
I lay skin down. I preheat to 90 degrees and put them in for about 30 minutes. Vented almost closed for the first half then fully open for the second half to let out the moisture. You can crank it up for the last few minutes just to get a bit of brown going.

Thanks - yeah - no-one wants herring but they're easy to catch, great for breakfast and high in good fats.

i love herring , one of the first species i ever caught , as you say great for breaky with an egg and toast !!
smoked or just filleted and crumbed at home or fresh from the ocean when camping ,crusty roll and butter ,bang the bbq herring in and enjoy

Yea - first thing I taught the boy to catch. I am not a huge fan coz they are a lot of work for the amount of food you get but the missus loves them and munches on the tails

are tops smoked !! I've just got a tin smoker that
I've had for years ! I normally fillet my herring
then brine em !! Bit of stuffing round but
the result is good !! Might try butterfly next time
save a lot time !! Nice work !! Pirate !!

Yea - I brine them too. I tried salt rubs but they come out a bit salty...
filleting herring is a pain in the arse - I agree with you on that :-)
