Land based winter snapper

Hi guys,
So my schooling days have finished and its my first winter that i can finally go out and chase some winter fish. My dad and i are interested in targeting some snapper around North mole, im new to this type of fishing( heard it takes forever sometimes, but willing to put in the time) so im not sure what weather is suitable or the wind, any advice will be greatly appreciated.

Wait for the winter storms and when the swell and the southerly is up they come into the rock walls to feed on the crabs and other crustations that get washed off. Just bring your wet weather gear.

The better, ya need a good wind at least, north / south doesnt matter.
I use the larger star sinkers running on my main line, swivel then leader to snelled 7 or 8/0 hooks.
Scalies and yellow tail suit the rough conditiones the best, you need a decent surf rod with a good cast. Wind in the slack and wait, just check ya bait occasionally while relaxing / getting wet.
Its usaully the days when you say its too rough!!, thats when there will be a few down there catching them.
