Eat it quite regularly.
Eat it quite regularly. Roast them whole, unpeeled, its the way to go, just ask Maggie. Actually, if you want to try something really rad, go for celeriac mash, Maggie's harvet book has much the same mash recpie, although it has no parsely or lemon, instead having apple and potato, it rocks with kangaroo!

Microwave
DO NOT try cooking beetroot in a microwave.Tried to once with hillarious results.Jabbed a fork in them a couple of time like you do with a spud, stuck them in on a plate and away they went.As they heated up all the red juice sprayed out the holes and all over the insides,it was still dripping off when I opened the door, lesson learnt!

Yeah I love the roasted
Yeah I love the roasted beetroots. Only problem is when you eat too many it tends to colour your....erm...ahh...'emmissions' let say. Sometimes you look in the bowl and you think you must be dying but then remembered you ate beetroot the night before.
