Pinky vs Dhuie

Quick little soft plastic sess last night with Tim VB after work, resulted in 2 keeper dhuies and a nice pan sized pinkie.
Had half the pinkie and half the dhuie on the barbie tonite.......and the winner is......................dead heat!!!!! Very surprised how good the pinkie was.
Cant wait for tomorrow nights dinner!

I rate them both the same. I cooked Dhuie ,Baldie, Pinkie and Redthroat the other night and with the family blind test the Redthroat came out on top. Must be something wrong with your palate Carnarvonite you don't seem to like Dhuie?

IMO dhuey is vastly over rated, sure its nice and flaky but its got bugger all flavour to it.
It runs about 7-8 on my top ten list of good eating fish, top three are equal, nannygai, boarfish and baldchin

watched an episode of the water with steve corrier had to laugh when he caught a red throat and threw it back saying they are prety average eating lol the he also said they dont get sany bigger than that, the fish was around 1 kg lol i have caught them around 4 - 5 kg regularly

yep red throats are tops, picked up a few on the way back from the islands last weekend but only around 1 or 2 kg.
Pinkys at that size are pretty tasty too though!

Hi John, you'll need to clarify these published test results for me i.e. A) You & Tim VB think both the dhuie & the pinky were eaqually impressive or B) You think one was better than the other but Tim VB went the other way which equated to a dead heat? If (hoping) it was the latter B) the only way to break this deadlock would of course be to introduce a third taste tester - It's at this point I'd like to offer my services, LOL......

I also have to agree Sea-kem
"Red throat, Blue-line snapper", then Snapper and out of these then dhu. When you compared Red emporer or coral trout directly to Dhu you will be astounded IMO about as Carnarvonite says the taste difference.

Interesting, I had Red Emperor (frozen mind you form Monties Trip) and Dhuie on the BBQ a few weeks back.......everyone agreed dhu was better, but it was a 60 cm dhu caught that day, which is primo eating size. Bigger dhuies (+80 cm) not worth keeping as they are no where near as nice to eat and are breeders.
Fresh Red Emp on the other hand is without peer........

I agree dhuy is very overrated, although still very good on the tooth.
my favourite(without eating many north species) would have to be whiting, cooked up fresh in butter! Nothing beats it. Sharks have to be a equal first with little gummies are sooo good if bled properly

they taste as good as they look. The Mrs caught a monster of a Harlequin fish off rotto in January biggest ive ever seen so i kept it. We wrapped it in alfoil with a bit of ginger and garlic paste in its stomach - bloody beautiful white juicy flesh

I asked that question about Mullas in another Post Tangles after there were a few caught on a Jurien Charter and the feedback was in no uncertain terms they were shite to eat. I've tried Mulla and reckoned it was alright. So are people taking the piss or is it just major pallet differences? Cause I love Dhuie especially fresh.And figure this my missus reckons fresh Herring pan fried in butter beats Dhuie FFS can't win lol.

I think
the difference has to do with where/what depth you catch them.
Personally i've only ever eaten Mulla's from the beach or Jetty and they're great but I have heard from guys on here (probably what your referring to) who've caught them from boat in depths over 60m and say they're ordinary.
Perhaps the depth they're in changes the flavour or texture of the flesh?

depthh changes
the thickness and consistancy between the muscle tissue which can alter texture, also seasoning to an immature palate can alter the taste of anything

You mean you put seasoning on fish?
Regardless of what species of fish why destroy the delicate taste with spices etc.
You might as well have a handful of spice in one hand and a piece of fish in the other and taking alternate bites or licks from each.

Caught a Harlie this week in the bay [lighthouse end ! ] and haven,t caught one for years , the fillets look amazing . Egg and panko crumb shallow fry , awesome !
Dhui on river to sea jig a few years back , 16 kg ! PB for me .

yeah paul. had to take her over the pits so was just making sure everything was tightened up.
im a chef and seafood is my specialty. i have been to restaurants and returned fish because the chef should be shot! when w used to take our fish fm wetlining down to perth to caningvale fish auctions i would watch what the top chefs eyed off. the mullas went first pinks next n the dhuis over 6-7kg were left unsold in the tubs!! its all about knowing the fish, from the way you kill it look after it until you eat it! ive eaten dhui for 37 yrs now n i still rekon its over rated. actually did an experiment one night when i was cooking up here at black rock cafe years ago. cooked dhui n mullas n this so called expert customer on dhuis thought he could pick the dhui over mulla. lets just say i laughed my ass off n told him to go study his fish. ive cooked mullas for other chefs n they couldnt believe how nice and soft the flesh was. dhuis just flake too much but the best fish out of the lot is good ol bald ass groper. the best out of the lot!
