Quick Metro Fish 13/03/2012
First report so hopefully will help others out!
Me and a mate headed for a metro fish last night, the plan was to be fishing at 6 but we left it quite late and with getting bait/traffic etc the first cast was about 7. Guy beside us landed a nice Tailor and pretty soon we were in on the action landing a couple of nice Tailor of varying sizes we kept one each for the table. We were using whole Mullie on ganged hooks with no weight and slow retrieve, worked well. After the Tailor bites bite’s dropped off we changed to some heavier tackle and within 20 mins my mate was into this Shark. Not 100% sure what type it is maybe one of you guys could ID for us. See picture below. Apologies for the poor photos!
All in all a good metro fish with some choppers and two Tailor kept as well as my mates first Shark, also couple of Port Jacksons caught.

I thought that it might have been a gummy are they good eating, and would this have been the correct size? I really enjoy eating fish that are legal size etc but was unsure so I threw him back. How to you prepare them for cooking similar to a regular fish? I have never kept a Shark for eating. Any advice on filleting would be greatly appreciated.

I'm not sure they have a size limit other than what your conscience dictates might be acceptable. From recollection there's just a bag limit. Someone might correct me on it.
As far as how they fare on the plate - tip top! If they're bled, gutted and finned straight away they are fantastic... nice white flesh, great for deep frying through to stir fries.
There are a bunch of posts around regarding cleaning sharks, have a squiz in the search function in the left hand menu - try text like 'cleaning sharks', 'how to clean sharks', etc. There have been a few over the past couple of months given the shark catching frequency over this summer.

Yeh they are decent tailor mate good work.
I'm pretty sure its a gummy shark too, and if it is they are probably one of the best eating sharks you'll find.
I'm pretty sure there is no size limit (somebody correct me if i'm wrong) but that shark is a perfect size for eating.
The way i do it is cut off the head behind the gills, cut off all fins and the tail, gut it, and your ready to fillet. Once you've done all that its almost the same as filleting a tailor, you just cut down the sides along the back bone. You can skin it if you want, but i'm too lazy and keep the skin on. Once you've cooked it a few minutes with the skin side down you can flip it and simply peel the skin off.

Nice, put the fish on ice to next time. Gummy Shark is HIGHLY known as a fantastic eating fish. When you get them, Spike them, then off with the tail, fins and head. Im not sure how to fillet them. But you want bits about 1cm thick i would say.
I love fishing. It`s escaping reality for a few hours for me!

Gummy Shark is flake in any
Gummy Shark is flake in any decent fish shop so you've probably eaten it before & as the others said, it tastes great so long as you bleed it & get it on ice quickly. Some say that shark flesh tastes better after it's been frozen for a week or two but I like gummy shark fresh personally. Try each way for yourself next time you catch one & see which you prefer.
The minimum legal size for a gummy is 45cm measured from the 5th gill slit to the start (base) of the tail. There is a personal daily bag limit of 2 including gummy & school shark. So you can catch two of either gummy or school shark or one of each but you cannot have more than two in total.
