Yeah mate, take the tail and spine out. Butterfly it. I use two snelled hooks, one through the eyes and the other half way down it's back. Want the back half of the hezza to be free so it flaps around.

When fresh I cut them into large chunks, maybe 3 chunks per fish and hook them onto 10/0 stainless hooks. Work well on joo's and pinkies.

Thread the leader through the main body of the whole herring from tail to head, and bury the hook in the flesh near the tail. Basically thread the leader up the middle of the fish and then smell hooks (via crimps not knots) at each end afterwards. That way it just looks like a lost herring floating in no mans land to the unsuspecting dhuies. Plenty of info online and on YouTube regarding threading the leader through the middle of baits.

pardon my ignorance but, in this context, buy butterflying do you mean to gut the fish and undercut a side fillet to backbone level?

Yeah , basically fillet the fish but leave the fillets attached to the head so it flaps around. That's my take on it anyway.
