Hey brg, been many years
Hey brg, been many years since I've fished the swan, but I always found a live yellow tail on a decent sized single hook worked well - less is best and as natural as possible :).

depends on size of livies.
depends on size of livies. but running star sinker on main line and around 70 cm's of 40-60 pound fluro carbon leader (depends on area fishing and size of bait). Can either go with snells or single IMO single make better presentation so you will probably get alot more attention using single but snelled will get alot more hook up if you get what i mean. Key is make it look natural as possible which means not a big dirty hook sticking out of the livie go as small as possible but at the same time make sure there is enough hook exposure for the hook up.
Good things come to those who bait
