THYME OUT FISHWRECKED CHALLENGE

Ok guys and Girls, we are looking for a new flavour of the month in either a pizza , seafood pack or pasta. As you all know by now we have the Thyme Out Cafe and Takeaway shop in Helena Valley which also does fish and chips pizzas and various other delicious foods in the evening and we are after a new recipe for either of the above . Come up with the winning recipe on these and have a meal on us. We would like to see some ideas of realistic values (no crayfish unless we have a constant supply of freebies LOL). the Winning recipes will be our December monthly specials.  The address for the shop is , Shop 6b #1 Torquata Boulevard Helena Valley. Just out from midland (NOT MT HELENA)If your in the area call in and say hi and maybe grab a feed, closed monday nights and sunday till 4 , Open Sunday 4pm to 8pm

being a local mussel farmer, i would have to say chilli mussels, they are the most profitable dish on a restaurants menu and i am sure your clients up that way dont have easy access to them. i dont deliver up that way but more than happy to do a december deal and work out a place of delivery

Ive got some crazy hot scotch bonnets and birds eyes on the go, and about 20-30 new capsicums and chillis in seedling stage.

Go well with the nice tomatoes and herbs I got too.  I can see a tomatoe paste/chutney day comming in a month or so.

Sometimes I add olives or capers or sundried tomatos or marinated artichoke to add some variety.....

Pizza base

sweet chillie and cream sauce (hot chillies optional extra)

prawns,scollops,musselles,squid (if you need a filler seafood balls cut up)

mushrooms and cornkernals and what ever else veggie wise you decide

cheese topping of coarse

might even have a crack at this myself

I am thinking of a seafood marinara style pizza using a pasta noodle base. Pasta holds it s shape really well after cooling.(This would need to be done a day in advance).

After the base is sorted, i would add warmed cream and then all the other ingredients onto the top of the base. 

 

And HuggyB,  I'll back my my chillis to blow any Habanero off the stage!Smile

Hi Faulkners, Glad to hear the cafe is going well.

 Sounds like pizzas are the most popular so here are a few of my ideas:

  • Smoked Salmon, red onion, fresh dill, capers and cream cheese.
  • Green chicken curry pizza.  Stir fry some chicken with green curry paste, add it to pizza with cherry tomatoes, baby spinach leaves, basil and roasted pumpkin.
  • A reef & beef pizza.  Tomato based pizza sauce, prawns, crispy bacon, beef strips, roasted capsicum, lemon pepper seasoning, mozarella
  • Scallop & Chorizo pizza - scallops, chorizo, tomato, spanish onion, roasted capsicum, spring onion, and garnished with lemon wedges and fresh basil.
  • As a theme on the business name, how about cherry tomato, mozzarella and thyme pizza.  Cherry tomatoes will be in season in December and the colours of this pizza are very christmassy! On a pizza base place large slices of mozzarella (or bocconcini), scatter over halved cherry tomatoes (can use red and yellow ones) and then sprinkle over thyme.  Nice and simple and caters for everyone (inc vegos). Also very light for summer.

And perhaps instead of pasta another idea could be adding a risotto to the menu (depending on how long customers want to wait).  Seafood risotto, vegetarian risotto, tomato risotto etc.  Nice and cheap to make as its mainly rice and stock and you don't need to add too much meat/seafood.

Pizza Base - Half white & half brown flour, minimal yeast. crunchy base with soft top. on stone.

tomatoe paste base topping with garlic & chilli paste from jar.

Onion, chorizo, marinated artichoke hearts, semi-sun dried toms, marinated capsican strips and kalamata olives.  then toped with numerous bocconcinni balls.

served with fresh basil leaves.

One of my favs at moment, a bit mediteranian, yum.

Simple pasta dish that I make at home

Smoked salmon sliced in to thin long strips

cooked pasta spirals

sundried tomato pasta sauce

chilli

hand full of sundried tomatos

paprica

english spinich shredded

parmesian

heat the pasta sauce up and add the paprica to it a pich of sugar and slowly add the spinich add the chilli  bring to the boil

warm pasta placed in large bowl place salmon on top of pasta gently pour sauce over (dont drown it) toss together serve it to serving bowls and a sprinkling of parmesian,gave this recipe to a mate in Adelaide who now serves this to clients in his cafe

Glad you liked the ideas.  I have lots of cookbooks (almost as many books as Wade has rods and reels!) and watch lots of cooking shows.  We'll aim to make it up the hill but believe it or not I don't actually eat seafood (weird I know seeing as I love catching it!) but I'm sure Wade will tuck into one!

 

One other question, what are your customer demographics?  Lunchtime tradies, white collar workers after a quick dinner as they are too busy to cook themselves, school kids after school?  Mainly Aussies, European, Asian etc. That might help us all with some other ideas.

 

We've got a new cafe near Ballafornia and its awesome as nothing around here caters for breakfast so we were putting out some suggestions to the owner the other day (mmmm eggs benedict).  Had a sandwich there I would have never thought of myself but was mintox - filling was chicken breast, snow pea sprouts, orange & mango chutney & toasted cashews.  Will be having that again!

Clientel well morning are mainly building workers ( 70 house going up right behind GRIN) morning tea the same and lunch worker plus locals and other workers from bussinesses down the road. Afternoon not many school kids just OLD FART CHOC MILK DRINKERS *lol* evening trade mums for kids dinners and then middle class mainly Aussies, love ther fish & chips ,Hot meals and Pizzas .

 

The main reason i am looking to incress our pizza range so russ has more to do *LOL* k/J i like to change it up a bit to keep them interested in coming back more than once a month

from what i know they are closed on monday nights but open during the day, sundays are only 4 till 8pm and weekdays are till 8pm every other night, and open early morning.
