in Holland in 1990 see family & cousin worked in Export smoke house, she brought around a massive big smoked mackel, took me three days to eat it, it was delicious, and this bird doesn't like fish, also their smoke, deep fried roll mops yummmmy.

Smoker
Mate down at Quindalup has a cold smoker--20feet of pipe from where the sawdust smoulders to a garden shed size box where the fillets are hung on rails to smoke. He puts the fillets in a brine solution for 2 days in the coolroom then a rub over with brown sugar/honey mix and into the smoker for 24-36 hours.
Magic results with salmon and mullet[only way I will eat mullet] fillets over a cold beer--sensational

Smoked
Smoked fish is great! When i worked in Scotland, there was a smokehouse next door...its so cheap to buy smoked fish over there! But if you have ever been fishing off the coast up there, you will know why...mackrel are like blowies up there

I take it you stayed near
I take it you stayed near Arbroath then Wade? Good smokehouse there and I agree about the Mackrel, as common as blowies but they can be good fun hauling 5 at a time on a string of mack feathers on light gear!

Scotland
Kev Stayed at a place called Achiltubuie..western highlands. Small fishing village on west coast.
Have attached a pic of the scampi boat we would go out fishing on. We were using the feather jigs, and yes 5 at a time was not uncommon. I had a bait on one of my rods sitting on the bottom all day, and it didnt get touched. Caught a few Pollack, they tasted ok. Also a pic looking out over the Summer Isles and the house i was getting paid to do some dodgy renos on...gods country!

Vander72, I'm drooling now & pancakes
I was born in Monnikerdam & Dad's side of the family. They took me to a resturant where all the windmills are and it only made pancakes savoury, sweet, god they where yummmmy.
