Grey Barred Cod all done up!

Ok so this one is pretty OTT. It was from the sunday times a few weeks back.
1) Bottom later is caramelised onions with star anise and saffron.
2) Next is the fish
3) Next is mousseline
4) On top are scales made from potato, cut on a mandolin!
Its supposed to be individual parcels in paper, but we had a few people over so I just did a big one to share amongst the adults and kids.
