After I set about 1000 lure spreads, got through tuna galore & also had a shallow running minnow as a shotgun lure on a 20lb plastic stick, I finally passed the rod over to him to enjoy. Meanwhile, I almost stuffed it up by losing his gaff in the drink. Having to pull a good mack onto the marlin board was worrying.
I did some maccie steaks on the barbie tonite after marinating for 30 minutes in soy sauce, lemon juice, white wine, garlic, chopped onion and a little bit of chili..........sensational.
Seasoned flour, egg wash and then into the panko bread crumbs before a shallow fry. Serve with lemon wedges and or tartare.... with chips and salad. Yum!
Smoked some of mine, been having it on top of pasta. This wahoo dish would be great with mack too. I can feel some crayfish meals coming after today though!
500 grams Maccy steaks 10 lady's fingers I med size egg plant cut into long wedges 1 tomato cut into 8 ½ a pineapple halved length wise, then sliced about 1cm thick 1 teaspoon of fish curry powder 2 sprigs of laska leaves Cooking oil Brown sugar to taste Salt to taste
Spice Paste: 2-3 cloves garlic lemon grass (just the bottom 2 inches – peel till you see the white) 4 shallots 8-10 dried chillies (depends how spicy you like) 1/2 tablespoon of belacan (prawn paste)
Tamarind Juice: 1 1/4 cup of water and Tamarind pulp (a square inch or so depending on how sour you like it)
Method:
1. I normally cheat and use a blender to blend up the spices till fine and set it aside
2. I soak the assam and dissolve it in the water, then remove all the pulp and seeds. All you want is the juice
3. Heat the pan and some oil and fry the spice paste till it’s fragrant. Have the exhaust hood going good if you put a lot of chill
4. Add the assam juice, fish curry powder and bring to boil
5. Add the egg plant, lady’s fingers, pineapple, tomato and laksa leaves sprigs and boil till the eggplant is soft but not yet falling apart (about 5-10 min)
6. Add the fish, salt and brown sugar
7. Simmer on low heat for 5 minutes or until the fish is cooked
