What do you mean by winged. I understand gilled and gutted, and I read that winged mean either the chest area (ie wings like in snapper and dhus- yum) or fins.
Just wondering because either way I find it makes filleting fish much harder (even gilled and gutted IMO)

about a month ago, I landed my first mulloway and it had been laying on the jetty for about half n hour now and it had already been gilled and gutted, then an old guy came up to me and said:
you gonna take the wings off that? I said why, he said they have a stink gland in them that goes through the whole body and makes the fish taste crap, so now once I catch them, I cut there wings off aswell, hang them over night and fillet them in the morning, by doing this the mulloway have tasted bloody awesome

Don't waste the wings all you have todo is cut the stink glands out the black things behind the fins on the wings still then it hasn't made any difference to the many mullaway I have caught the wings are one of the best parts
