What is the difference between an Amberjack and Sambo? I saw Paxovanis catching what he was calling a Amberjack but I swear it was a sambo exactly like yours.

Number of rays

There is a difference in the number of rays in their dorsal and anal fins with the sambo having 23-25on its second dorsal fin and 16-17 on its anal fins while the amberjack has 31+ and 19+ and the amberjack is more torpedo shaped.

Mate - that was worth the petrol burn - a good day out like that makes "lesser days" more palatable.

I kept a 5-6kg jack once, and it wasn't that flash. The flesh wasn't firm enough for me. would be better suited to a curry or something like that. I haven't tried a sambo, but hear similar reports.
