What's your favourite fish cake recipes guys n gals?
Cooking up some tonight for dinner with just a googled up recipe but thought you guys may have some better ideas...

Recipe
Gummy shark or whatever
1 x lemon grass
1 tbsp sweet chilli sauce
2x tbsp coconut cream
1/4 cup shredded basil
2x tbsp fish sauce
3x tbsp sugar
1x garlic clove
1 x tbsp finely chopped ginger
1 x large shallot finely chopped
1 x small red chilli with seeds finely chopped
1/2 kaffir lime leaf shredded
Bit of peanut or olive oil to fry1 x tsp red curry paste
bit of coriander

This sounds great, I'll have to try it . It should be emphasised though that the Kaffir leaf should be sliced into the finest slivers possible rather than shredded (imo)
Also try using Thai Basil rather than the green Basil , completely different tatse. Can get Thai Basil from some Woolworth's stores. The one at Stock Rd/Leach Hwy stocks it fairly regularly now.

Tuna
Tuna boiled up, same measure of potato, when cooked mix together with few eggs, chopped up onion, parmesan cheese, roll in in some breadcrumbs and into a frying pan with butter to brown them off.
Fresh salmon is better and leave the red meat on to add to the taste.

I really don't
have a fish patty recipe. I just cook up what carnarvonite says or deb instant potato, but also add some red curry paste, fresh coriander, chopped spring onions, salt/pepper, roll into patties, then breadcrumb, cook till warm through, better tasting the next day (if they survive) as the spices go through.
I have to make some as somebody is nagging that I haven't made any in years.
