The Mrs found that mix

The Mrs found that mix a month ago Neil - was impressed.  It is now a regular in our crumbing.

Mulloway, you forgot the crumbs;

I coat fillets in flour first, then dip in egg/milk mix, then into bread crumbs, then shallow fry (oil only covers half of fillet), obviously flip fillet for other side.

For something different, substitute the bread crumbs for crushed cornflakes.

Cheers Pete

shredded coconut mixed in with the breadcrumbs gives a great flavour too.
