fresh feed of salmon

Just had a feed of fresh salmon that was caught just last night.
dont know what others feel about them but after trimming off the dark meat i portioned up 1 fillet . dusted it in flour and cooked in a bit of butter. and a squeese of lemon juice.
thoroughly enjoyed it.
what are others thoughts about the taste of them

With the bloodline removed they are fine good for dumpling still prefer skippy or herring over salmon but also go well in a terayaki

I found it like a bigger
I found it like a bigger slightly mushier herring (I bloody loove herring) and would rather use them for berley but they are very nice when salted and smoked.

Nothing wrong with them
Nothing wrong with salmon done in butter in the pan.
Made in to patties is even better, boiled up, mash spud, some and egg to bind it with raw chopped onion and parmesan cheese added just as you form into shape before putting in to the pan
Herring are best when straight out of the water and on to a BBQ plate, no cleaning needed, the gut shrivels up and the scales lift off when cooked

Experiments
When pro fishing for salmon, we would all take one fish home to make patties for lunch the next day once a week and compare recipes to find out whose was best and try to improve on the next time we did it. Tasted some real beauties and some bloody shockers before we got it right

Boiled in a pot of water with a house brick , chuck it all out add salt and eat the brick. Sorry guys couldn't let a post about eating salmon sneak by unscathed

Crapola all round I'm afraid, although I have had them in fish cakes and they were ok after a few beers.

Once caught bled gutted and straight on ice then properly filleted and cleaned. Thin pieces beer battered go down a treat. As well as patties. I mean i wouldn't go outta my way to go get them for a feed, but i wouldn't release one in a quiet session. I love hearing blokes say how shit they are to eat and then when you ask how they cook them they say they baked it whole. Haha can just imagine the smell of their house after.
