2 of the easiest I've used a Pinnacle and Ulead Video Studio which is now owned by Corel. At $80 it's hard to beat price wise and has an easy drag and drop interface. Easy to learn and edit. The thing I like about VS over pinnacle is it has better speed control for speeding up and slowing down video.

If your good on the PC you cant beat Abobe Premiere Pro and After Effects. Not that hard to crack either, plus can run plug ins like twixor. A good one that is much more user frendly and simple is cyberlink prower director.
