That's a huge question
...but, if you've got lots of coin, go for a 295 with a 2 or 3KW in hull transducer. If you've got little coin, go for a 587 (I think this is what you mean) with a transom mount 1KW transducer. If you've got moderate coin and big balls (to drill the holes in you hull), go for a 295 with 1KW SS264 50Khz and 200 Khz thru hull pair. If you like a bigger screen and a few more features, always go for the 295, regardless of transducer.
Really, in order to get good advice, you need to say what type of boat you have (eg thru hull doesn't work with ali, and 2KW/3KW wont thru hull effectively unless the boat is > 30 foot).
Lots of very good fisherman on FishWrecked get by in deep water with the FCV 587, so really that is adequate, so long as the transducer is good and the fitting is well placed. All the above will cope with 309 metres

587 and 1 kW excellent up to
587 and 1 kW excellent up to 300m and seeing fish no worries, OK to 400m but fish hard to see in this depth and can read to 500m but forget seeing fish.
Boston Whaler 235 Conquest......getting the flogging it was built for.

I went through this process
I went through this process not all that long ago...
Your biggest decision will be,
Will you fish deeper than 300m?
If you don't, I doubt very much you will justify the cost of a 2-3kW trancuder set-up.
If fishing less than 300m a 1kW transducer is all you will need, if you choose a 1 kW transducer you will see little improvement when running through a 295.
295 = 2-3kW transducer if your are to use it to it's full potential, 1kW or less you could go a 585-587 or equivalent.
My choice was the SS264 pair, 50 khz and 200 khz, matched to a 1kW sounder. It's gonna be sweet!

I use a furuno 587 with a ss264 pair thru hull 1kw transducers and am really happy with the performance i bought the unit local and the transducers from the states worked out just over the 2k mark. I Have been out to 340m and it reads bottom well but u need to slow down alot. Like said above it will all depend on what hull u have.

One phone call to Taylor
One phone call to Taylor Marine will have you sorted. Even if you choose not to buy from them, they will put you onto one of their Furuno dealers.
Keep in mind that these high end tranducers can sometimes only be as good as the install. If any doubt just get one of the pro's to do it, they will know the best location to install it and correct style of transducer to suit your hull. There's little going back if you choose to drill holes!
