Kayak fishing

We are planning on buying a fishing kayak to go offshore with (preferably a 2 seater), and was wondering what models would be good.
We will be most likely targeting be targeting mid sized fish like skippy and tailor but would love to catch bigger fish like snapper. Although before purchasing a kayak we would like to know if there are any safe spots to launch the kayak where we can get a decent catch.
So any help would be much appreciated and also gear and any kayaking tips would be helpful.

 Before we got our boat I regularly went out on the yak to Little Island off Hillarys. The resident rays and herring kept me happy when I was younger

Are there any specific models that are better than others? Also do the hobbies/ kayak come with sounders or do you have to install them?
