Knife Range - Kiwi Knives By Popular Demand

In January 2016 we sought feedback on what knives were favoured for the purposes of processing fish (see: http://fishwrecked.com/forum/knife-range-members-input-requested).  The response we received was fantastic and we put together the range as shown below.  It is testament to the quality of the feedback that we have sold many of every knife type we hold.

The only addition to the initial range had been the “Carnarvonite”, which is a 25cm sticking knife.  John had lost his old trusty so we searched it out and it is certainly a quality item (see: http://fishwrecked.com/forum/carnarvonite).

As many would know, Victorinox has bought our Swibo and has discontinued many of the styles that are suited for fish processing.  In this respect, we have had a number of requests for some different knives and in particular the New Zealand made Victory knives.  This has been backed up by Konway from Fillet Fish Australia who had the following to say about the Victory Diogenes:

“The knife I consider the best fillet knife ever made is The Diogenes 22cm. They are such a versatile knife and although some guys like myself use a limited range of knives and others have an arsenal, one thing is common a Dio as we call them can be found in every knife pouch of every guy I work with. Something that cannot be said for other knives.”

On this basis, we have imported some different styles of the Victory knives as shown below.

22cm Victory Narrow Filleting Knife

Konway has this to say about the knife.  "This 22cm Victory knife is also popular, it has a more flexible blade then the Diogenes and also makes for a very good skinning knife. This knife usually comes fitted with a white handle that consists of small nodules which aid grip."

22cm Victory Thin Filleting Knife

A variation of the above for those that like a very thin blade.

Personally I have always preferred a stiffer blade (my go to knife is the Victorinox 15cm curved thin boning knife) although some people like the more flexible blade and have used it successfully for years.  Konway’s statements about this make interesting reading.

“The type of filleting knife a person chooses depends on several factors however there are some obvious points to consider when making your choice. There is a misconception that a fillet knife should be a super thin extremely flexible knife. In all my years as a pro filleter I am yet to have worked with a single person that fillets with the type of flexible knives that are predominantly sold at tackle shops and marketed as excellent fillet knives.

Most professional filleters use knives that have much stiffer blades for good reason so when making your choice consider the opinion of guys who fillet for a living and have used and experimented with countless knives as opposed to marketing people who I’m sure have never cut a large slimy cod with a flimsy bladed knife.”

I believe these three additions to the range are very worthy and we will now stock them so you are welcome to come into Shore Catch for a look.  If we don’t have stock, there is a 7 day turn around in delivery so we can order them in.

Another knife style that we have been repeatedly asked for is a good quality deck/kill/bait knife.  Many times I have told customers to go and buy a cheap knife from a tackle shop to use on the boat as the knives we stock are for processing fish and are too long and sharp for general boat use.  Following feedback, we have now sourced another Victory knife which is well suited for this purpose.

10cm Tuna Knife  

I like this knife a lot.  It has a small thick rigid blade with a full sized noduled grip.  Its original purpose is a kill knife for tuna but its attributes make it perfect for multiple boat purposes.  We will also stock this knife at $35 retail.

Our knife range has progressed and adapted to customer demand.  We are now very close to assembling a range that caters for the personal requirements of most fishers, as it is clear that everyone has variations on the knife set they prefer.  I believe these four new ones add some value?
