Did you keep the small bones inside the head? The size of the bones usually indicates how old it is, I think size too...nice one.

it is actually the best tasting fish ive ever had it tastes better than snapper and better than a dhuie i tried.

as it just come out the freezer with its head in tact i beleive that the bones should still be there or are you thinking about its jewels.

Haha good on you mate, you showed them aye. Keep on putting your pics up and keep on making them jealous. We know that you can outfish a lot of them anyway. I only put my pics up with the location showing if I'm not going to fish it for a while, or otherwise I look at it like this, if I've caught a decent fish then there probably won't be another caught for a while and I'll try somewhere else. Especially in the metro area.

 right up near the head along the spine you will see what looks like a ball. it is hollow and the jewels are in there. just use a hammer and flat screwdriver to bust it open and fish out the jewels. they are realy hard so you wont damage them

I only heard about the "jewels" from me mate in Derby the other nite.Their Black Jewies(related to our Mulloway) also have them.

Apparentley they are Ivory.

mulloway 'jewels' are the fish's otholiths. all fish have otholiths, obviously differing in size, relative to body size,mass etc. studied a batch of herring otholiths late last year and its very interesting, all the different shapes and markings and seeing the corresponding fish lengths, sizes and ages. also studied the 2004 Swanfish Black Bream Otholith survey results. came up with some really interesting points. for example, 21% of the bream surveyed only had a right otholith, whereas only 4% recorded had only a left otholith. a further 17% had either one or two damaged/not fully developed otholiths and believe it or not, out of about 80 fish recorded, 4 of them had no otholiths whatsoever!

Its made up of dentine. Its the size that makes it valuable. I dont believe the composition of Otoliths is dentine but calcium carbonate, ie bone.
