thanks everyone it wasnt off the rocks or boat but it was landbased it didnt fight very hard at all it was a bit of a let down when i saw how big it was
to get the best taste out of a fresh fish is to simply dust the fillet in flour and into a pan with a bit of butter or marg, then if you realy have to add anything just a bit of lemon pepper seasoning will do the job
bit hard to fit whole on the barbie, hehe, normally smaller ones, 2-3kg love just whole on the barbie with abit of fragrant rice in his cavity (rice ginger chilli corriander) doesnt overpower the sweet snapper and gives you a nice side dish to some of the best tasting meat in the sea.. my wife likes a really crispy coating on her fish, so i sometimes use raw polenta like you would flour.. just dust it in the polenta and shallow fry til cooked.. serve with a fresh tomato basil onion and olive salad...
If you havent already, get some fish coating from a shop close to you, used it for my herring and they tasted beaut. also tried with snapper and they taste twice as good.
