For Crays and Occy. Equal amounts of White wine vinegar and Grapeseed oil
Plenty of garlic, red chilli, pepper corns and parsley. And a tablespoon of Balsamic Vinegar

I steam mine but only for 6/7 minutes. It doesn't need to be cooked completely as the vinegar will do the rest. I should try some raw to see how that goes.

White vinegar, splash of apple cider chilli, pepper and sugar to make pickling liquid. Heat until sugar dissolves then let cool.
boil crays for 50-70% of normal cooking time then ice bath to stop cooking. Sterilisation for jars then load them up.
I always put an olive oil cap on top of the pickling liquid after the jar is full of cray meat, but I don't know it matters.
