Criss cross inside of squid ( makes small squares) only need to do lightly with knife. Then chop in squares or strips . 1 cup of your choice of vinegar cup of water . Salt/pepper/ chilies/garlic / onion I also put few squirts off Italian salad dressing . Always keep mixing and tasting as you go. Once you got it to your taste ( boil it) once boiled turn off and put squid in . Then put in jars. Makes squid crispy on outside tender on inside . If you don’t want to pickle it quick don’t boil vinegar mix ,make mix in jar drop raw squid in and leave for few days, you can use less vinegar if you use lemon . Reason I do 50/50 vin/water zero chance in food poisoning if it’s lasts that long . Never had any complaints doing it this way . I do crayfish the same
