Queenie two ways

Tamara got a nice Queenie yesterday and this is how it ended up. Good old sashimi with soy sauce and a truckload of ginger and deep fried with a rice flour n cider batter. Added some of the essential fish and chip condiments with a non traditional being a deep fried dill pickle. The verdict was yum!.

Here you go
Scale it down if need be.
Dust fish with rice flour.
3/4 cup plain flour
1/4 cup rice flour
1.25 tsp baking powder
.25 tsp salt
1 cup of Strongbow blossom rose cider or beer of your choice.
Just before cooking mix all dry ingredients. Add super cold cider, whisk until incorporated evenly into the flour. Do not overmix, don't worry about flour lumps. It should be a fairly thin batter but fully coats the back of a spoon.. if too thick add cider 1tsp at a time.

the batter i mainly use is
the batter i mainly use is just self raising flour and damn cold soda water . always comes up nice and crispy but your spot on with needing to be a thin batter. i just dip my finger in and as long as it leaves a thin coat on the fish its good to go .nothing else needed and never failed
