Rays

Hi all,
Got a friend of mine who does a lot of beach fishing - so not my specialty at all! Of late, he's been doing pretty well and getting a few rays as he mainly fishes late night. So I've got a few questions....
1. Are they any good to eat? I've heard that the wings are awesome
2. How do you "treat" them to eat of they are good.
anything on rays would be great.

I have had rays in Singapore many times. They steam the wing in sambal having skinned one side and I must say I am a massive fan. Dont do it myself because it seems a lot of work to me.

I've always been told that if your order scallops, be sure to ask for the roe on. And be aware of the 'perfectly' round ones, because some establishments will substitute the scallop for ray wings cut with a cookie cutter! now if they can get away with that, maybe they're not bad eating after all!

yeh sure can eat them - only ones i eat tho are the ones with the blue spots on them.
just make sure you cut the wings off them soon as you get them out of the water otherwise the amonia builds up in the meat. bit fiddly but you need to skin them and then fillet the meat off the cartilage in the wings. yummo

The French ...
The French have plenty of recipes for skate, the classic is probably brown butter and capers.
Mind you the French probably have a traditional recipe for fish arseholes cooked with stacks of butter, cream and herbs. Its probably half decent too!
