I'm new to this stuff so please be gentle hahaha.

Some blokes at the pub reckon half the scallops you buy from the shops are just circles punched out of stingray flaps? 

Any truth to this???

 Don't see many with roe at the shops hey. Then you get the 1kg bags that look and taste about the same as greasy crab sticks from some wheatbelt roadhouse. OK with a teaspoon of chicken salt haha.

 Yeah buy with roe on and end up with the Chinese ones bloated with water and 3/4 of the weight is roe.

Try and sear them and end up with boiled and stewed tasteless Claytons scallops.

Maybe better to just read the label properly and buy MacBoats scallops or one of the other local fishing companies.

NOTE-this specifically DOES NOT include Kailis Bros, who thaw and refreeze Chinese rubbish mostly

Local scallops from the Fremantle scallop trawl boats generally come to wholesale market in December, and get a high price.  Skate, which is the "stingray flaps", comes in year round and attracts a price of $5-$10 per kilo.  I don't know how the mongers sell these, but it wouldn't surprise me if some is processed to look like scallops.

Scallop fishery in WA seems fairly limited (I have not researched it though), but I agree with Rob that McBoats and others from the Abrolhos are probably the WA pick.  Local products that are looked after are always the best.

Bass Strait is a very productive scallop fishery, and the quality is generally good.  Roe on scallops seem to be sourced from there.

In my view, stay away from imported scallops.  Cheap scallops aren't good, good scallops aren't cheap but are worth it.  Make sure you know what you buy.

Hopefully not too many scallop trawlers dragging boards across WA these days.  Hardly seems worth it for the damage they can do.

Be nice to know where the flaps ends up. That's a high price if that's what they're getting off the boat, must be in demand somewhere. Maybe crabstick and seafood extender sales are booming!

Got a bit more info on the skate at market this morning.  They are eagle ray wings, as apparently the other species are not saleable.  The mongers cut them into wedges and sell them skin on for about $15 per kg.  No idea how they are cooked an eaten though, and they only really come in during summer.

The local scallop trawl was very poor this season.  It seems that seagrass had grown over the beds and the boards wouldn't dig in.

 If you have ever tried stingray flaps you would remember the taste and texture, there is no way you could pass it off as scallops, for one you can see the grain on flap meat but there isn't any on a scallop.

 Similarly though, the Asian "scallops" we get thru KB etc, can barely pass as scallops except to those who;

  • buy once a year for a special occasion
  • Wouldnt know how good local ones (including Bass Straight) are, and so dismiss them as over hyped

Local ones are delicious raw straight out of the shell or even from frozen.

But for those that don't know the fishery in WA, it is highly reliant on the Leuuwin Current to drop spat along the coast and the major areas are Shark Bay, Abrolhos, Freo?, Albany and Esperance. There are years when MacBoats trawlers will sit idle otrher than the sampling runs for Fisheries, other years its full bore.

When I was longlining out of Albany in the very early 2000's one of the fish trawlers picked up a heap of scallops, the fleet came down and hit them.

I had my deckies helping to shuck at the Town Jetty and got bags full of scallops-was eating them for months, fucking heaven-I could live on them no problem.

My understanding of the fishery is that;

  • They trawl on sand-very little if any damage now that the sand patches are well known and plotted.
  • All the spat comes from Shark Bay, even if they are trawled bare at Freo etc, it has no effect on future spat settlement

Heres my scallop story 

We came into Geraldton from a longline trip in March and as soon as we were in sight of the harbour I could see all the trawl booms above the breakwater.

Fark... Alaways trouble when the scallop trawlers are in.

We unloaded our swords and tuna, sat down for a beer and one of the crew took our bags of rubbish to the skip bin.

He converged on the bin same time as one of the scallop deckies, they spoke for a second and got a punch in the face.

We jumped up, he walked back over and we asked "what the fuck happened?"

He said "he chucked a vaccum cleaner in the bin and I said for a laugh, ya know ya can just empty it and use it again"

He stared at him for a few seconds, punched him in the face and walked off...

10 deckies on a scallop trawler and 4 or 5 on a long liner, let that one go

 Needed a new decky when working out of Canal Rocks area so put an add in the paper.

Was answer by a lady living close and also had a MC 5 and a Med2, lasted one day, bloody useless, sh had spent 7 years at sea down the blunt end of a Scolley boat shucking scallops , she could do all the paper work to get her tickets but as far as putting it into practice was anther story. From what I have seen she was 3 steps in front of other scolly deckies who would spend 20 or so hours a day down the blunt end shucking just to make a decent quid

 are that years ago a fish n chip joint may get away with it crumbed or battered but seriously, if you can pass off a ray flap for a scallop then why all the hate on rays? I chewed an eagle once and it was great! (not scallop) though. I have also had scallops that i could roll out like a big tape worm . clearly crabstick / seafood extender/tripe materials

 I reckon maybe its like most fish. Cared for and prepared properly reckon most blokes would rate it in a blind test. If you just chuck a flap on a bed of coals would be horrific to eat.

Like most flaps, it's better when cleaned properly if your gonna eat it.

Cant say I'm overly phased by scallops, don't mind them but can't say they spin my wheels or that I'd pay good dollars for them compared to what else you can get.  The boston Bay 500g mussel specials (when they're on at $7) and local chili sauce up here in ktown off the fish truck is epic, have to drive the bottom road to stop the wallet getting busted out all too often.

I like to cook em flip, flip on a super hot pan place each one on a little blob ( half scallop size ) of harissa mash and top with a wee bit of pork belly. Pretty damn hard to beat!.

Go to Woolies and get a tube of Harissa paste. Make some dirty mashed potatoes ( lots of butter and salt and whisk them in a stand mixer for the fluffiest potatoes ever, if no stand mixer just make sure there's no lumps ) Add harissa paste to your liking and Robert is your fathers brother.

 Best scallops I ever had were at the old Star Anise in Shenton Park. Had a thin medallion of fresh pineapple with the scallop on that, topped with shredded duck meat and crushed roasted peanuts. Delicious!
