Smokers

Hi All

Just researching smokers and would be great to get some ideas, advise and feedback on smokers you may have experience with.

Also, if anyone has used the Bradley smokers would also be interesting to hear of your expeirences on these pricy units.

I havea  got a Bradely Smoker and love it, i've done fish twice now, first time in brine first then just straight into the smoker, i'll just stick with straight into it from now on. love doing Cashews in there, Brie cheese as a hot dip, pork belly and pork BBQ ribs as well. 1/2 the price of a bloody thermomix too!

never used a bradley but they are supposed to be great

im going to buy a yoder YS640 for home  - pellet smoker that you can leave to do the job happily grillpro.com.au

otherwise i use a couple of busted old webers that i picked up off the side of the road during collection day until i can afford the yoder

they do the job quite happily and have done for a couple of years now

also you could talk to a guy called Chris - http://www.urbangriller.com he knows a shitload about smoking and curing

and if you want an easy how to - torrent "myron Mixon" and get his book "smokin" - awesome

I like that fact i can control the amount of smoke into the machine, i cook my pork belly for 2 hours or more but only smoke it for 40 mins at the start, and the fact that the drip tray for the burnt briquettes adds moisture to the environment so things don't dry out either so you can't really stuff it, only way is by cooking it too high!

Are you chasing hot smoker or cold? 

For a cold smoke unit - I bought one called a Smoke Daddy and then we custom built a cabinet for it.

Had some good success making snags, smoked makkie, pancetta, speck and other delicious pig related foods.

 I have a Bradley Smoker. Yes, they are expensive but do a great job on everything from fish fillets to full roast meals.

Mine is a six shelf which I find I do not use that often. The choice of wood chips is excellent and the machine doubles as an oven that is electrically powered. 

I am actually thinking of selling as I just do not use it very much and saving for a new boat. I am in South Perth (if that helps)if you want to check it out as a comparison to others. 

The Bradley's are well worth it.

if you are looking to buy new, I can put you in contact with the importer her in Perth.

Stainless nipper kipper from BCF

 We use the basic stainless nipper kipper box, these are available from BCF.

does the job for the amount of fish we smoke, mainly Spanish Mac.

trick is to make sure the fillets are air dried properly after their soak in basic sugar and salt brine.

It is small enough to take away on fishing trips where some fresh smoked spanyard is enjoyed by all.

Went out early this morning before the breeze came up,and now for lunch-smoked tailor fillets and a beer.
Hmm.Need to work on the pic with the smoker and fillets.
