Straight out of the water and grilled over open coals on a wire mat.....juices dripping into the fire to give that extra smoky flavour . Best way to have them I reckon.

Cheers didnt know wheather eat em or not because they smelt a bit weird so i filleted the smaller one and the fillet seemed realy fatty and started to dry out after deboning so just froze em for mully bait

Wrap in alfoil whole with
Wrap in alfoil whole with some lemon in the guts and cook in the oven, keeps all the moisture in.

They smoke up better than any other fish IMO, just a few hours in a god brine and a light rub over with brown sugar then into the smoker

as ive said to ya, from rivers, estuarys and any where it's muddy and theve been fearing on algae there shit, but from ocean waters like surf beaches there better than most fish, peeps call the estuary muddy ones soft gut mullet, and the beach ones hard gut mullet, the beach ones don't stink at all and taste better than snapper, the estuary ones are stinky things and taste like mud, chur to the chur
