My latest boat has a centre
My latest boat has a centre ski slip so i use that!
But before then i always used the side bollards with a equaliser.
Make sure your boat has Skiing insurance as its normally about $100 a year extra. It is with Club marine anyway!

Bollards
Straight off the bollards on the back corners for me. It is a 6.1m (built like a brick shit house) ali though.
Main thing is to have dedicated spotter so you can concentrate on steering. ;)
