Perfect size for whole baked in the oven, fed 7, as good as seafood gets.

Bit of lemon and dill, lemon juice and lemon zest, small amount of finely chopped chilli, bit of garlic all rubbed in with butter with a capsicum and onion stuffing.

Around the 55-60 cm size is perfect for cooking whole in the oven.Whilst not big, he was a fat little bugger, and fed 7 people easily and had some left over for the next day cold. Surprising the yield you get whole cooked vs filleted, and as a bonus, you get the cheek meat which is the best of all.

Looks the goods mate. Did a baked red emp (not generally my cuppa tea) a few years back for xmas, and ended up full from all the other stuff. As you said amazing the amount you get off it that way, I ended up getting all the meat off that didn't get eaten, and made the best red emp mornay going the next day. Mintox!!
