Edit: Did you know when flounder, halibut etc are first born they swim upright like normal fish and as they grow the eye migrates to the same side as the other one and they start to lay on their side until they are "flatfish"
person but do love, flounder, have caught some on the beachs around Leeman but released a bit small, let them grow for another day. NZ flounder is also nice, frozen but very nice, have had that eating out

Not many left
The swan river used to be full of them, plate sized too but got fished out.
Used to get a lot in the sound as well, have caught one of simular size but over 10 years ago.
Biggest one i have seen in many years, tasted awsome very fine flesh.
Don't know if halibut are related (not an expert tho )
