The ironing board is a great idea, though in saying that I though Neander's version was gong to get washed out with the tide when we went on the Fishwrecked trip to Flatrock last year - probably because we left it on the beach and all went and sat around the fire drinking (Lol).
Best set up using an ironing board is to fix a spring hinge with a few self tappers to one end of the top.Scew a few more screws through the loose side of the hi poking through the inside of it to form a gripper to grip the tail or nose of the fish you are filletingThis leave s you with a hand to hold the fillet as you cut it off instead of having to hold the fish
