I have a Nolex 32 and 51 mincer which is a monster and does'nt heat up the meat (no time its so quik) and a Thompson 50kg hyd filler that you can ajust 2 as slow as you want, ie depending on how firm you want your snags.
Yes they are dried now, good to go up the shed and have a feed lol with fresh bread, the family were making them well b4 I was born, Im 5 generations, th sons and I have perfected the 4 different flavours we like and stick to those now, but you can go onto google.

yes.
garlic chilli,anything u want, but get the salt right,and taste before u cure.We always cook some up in the fry pan first.
