We used the boats retrieval rope and clipped it onto the gun. Then 2 of us held on whilst Gribbo shot it, but it didn't really fight too hard (compared to a line capture). I was ready to put a second shot into it, but didn't need to as the first clipped it perfectly in the lateral line. We thought about it for 25 minutes before shooting it and put a flipper on the end of the float line (no float) just incase it took off into the distance. We only had one trout in the esky for the day so made the decision to go for it.
As for eating qualities, I reckon it tastes like steak.
The ones I've eaten previously I rated as not too bad, pretty much as Goatch said, 3.5 stars. I haven't eaten one this big before so should be an interesting experience.
