youve been told lies my friend
de boned and skinned dusted in flour dipped in egg and rolled in breadcrumbs - then pan fried in butter there beautiful - if you spike n bleed em straight out and store them in an ice slurry or at least in an esky on ice they will hold together alright but left in a bucket in the sun they will be soft and fall apart

i took my daughter out in the tinny yesterday and we both landed a couple off them both at 70 cm biggest ive seen also found a school of salmon only manged to hook one but lost it as it was to hard to steer the boat and fight the fish next to the reef

Friend of ours last week
wondered why he was loosing bait all the time as he was targeting whiting, next minute reel went off and caught a nice big pike in the Sound, don't know if he kept it or not.
