Got given a couple of cutlets other day, sat in the fridge for two days and I just lightly coated it in cornflour and pan fried it on medium heat. The meat was flaky and soft with no so called ammonia smell. I reckon better than mackie cutlets. Not sure about the ones caught in the river tho.
so next time if u live in the Murdoch area and catch one from the ocean, I'll cook some up for ya and ill tax half the fish:)
Nice fish Hesh and a bloody ripper pic, near level horizon which is hard on a boat, and the flashy flanks of the croaker in the sun, hard one to beat! Something different from the usual trollin and pelagics eh?

Cheers Ron. Same here - never keep another one! Too much amonia in those big ones (or that's what it smelled anyhow).
Smaller ones tasted awesome though, I mean just sized ones.

Cheers Andy - started taking my Mrs old SLR with me ... she got me a nice lense for it, and was a way to go (away from the size ).
That's beside the GoPro, which is unbeatable on movies, but not the best (above water) for still photos.
