I've kept one of that size before and it was full of sinew and fat and looked horrible, tried one piece and wasn't overly impressed. Can't say I'd keep one again, but KC may have convinced me to give it a second go.
But I would be careful with larger fish. Adds they are a Latjanid (Lutjanus bohar ) and I believe the whole lot taste bloody good, all *** or **** in the books.
That is a great fish Simo! Good choice putting it back. We had a big one die on us once in Exmouth so rather than let it be eaten by the sharks we kept it. Just like Adam said...full of sinew and not very nice. I reckon the smaller ones would taste great.
