Smoked herring with garlic and parsley sauce

Well, not all the Herring from last Friday were converted to big fat fish out deep, and just as well, they're tasty smoked!

feel like a feed of them now. were they cold smoked? ive got way to much heat in my smoker atm and it ends up cooking the fish rather than smoking.

Finger Food
Nice looking dish there till. I smoke a whole heap of Herring (tobacco not in the same recipe LOL). They are GREAT finger food with a beer. At the moment I am using Olive sawdust. It's really nice with a tinge of peppery flavour.
