Yep, caught my fair share of rays over the years too. Almost any time that burley goes in the water and theres no good fish around then its either port jackson or ray city.
By the way, I've heard port jacksons were taken off the protected list? Is this correct and why were they on it in the first place? There seems to be plague proportions of them out there at the moment.
to prepare stingray meat cut the wings off and slice them into strips about 1 1/2 inches thick and as long as the wing .
if you go with the grain (from inside of wing to tip) the flesh is nice and firm but if you go against the grain (parralel to the body) the meat becomes very soft most of the time.
havent eaten it myself but i used to sell a heap of it in belmont.

ive eaten stingray
i had chilli stingray wings when i was in malaysia last time i was there bloody fantastic!!
tried doing one ere but ran into probs with getting a nice cut on it
the reef fish loves it as bait though!
