I neck them, let them bleed out for a couple of minutes, then break the back of the neck, pull the guts out and rinse as much remaining blood out and then put them straight on ice. Then when preparing, take off the fillets and cut up the premium shoulder area into thin small slices and put straight onto crushed ice to firm for a short time before eating.
