Wahoo is certianly up there for me.
Finally caught one in Exy last year and couldnt believe how good it tasted. I find it hard to cook though because its so lean.

Bluebone is a nickname
There are about 6 species of "Bluebone" in WA, in fact they are all Tuskfish, or Choerodon. Baldchin Groper, Blue Tuskfish, Blue spotted Tuskfish, Purple Tuskfish, Venus Tuskfish (maybe Blackspot but?) and Blackspot Tuskfish

It's a hard vote because there are no Coral Trout and warmer species in the metro so I voted Metro and it is hard to go past Red snapper 1, Dhu 2
