Although Yellowtail Grunter are in the same faimly as the Western Striped Grunter (which I'm assuming you are refering to have eaten as a kid), they taste completley different.
If you get them at a reasonable size, they are actually pretty good on the chew. A few people i've spoken to even prefer them to bream.
Only ever caught juveniles while chasing bream, they look a lot different to the older boys. Chucked him back to swim another day and shit someone else down the track. Thanks again.

I tried Trumpeter when I was
I tried Trumpeter when I was a kid and I didn't know any better
Normal pan fried it tasted like a fishy mess with bones all through it
I suppose if you really wanted to do something with it you could make fish cakes or cook it in 101 spices and herbs until it flaked apart
